副厨师长需全面遵守上海迪士尼度假区餐饮运营标准,通过协助厨师长统筹管理厨房高效的日常运营工作,为游客打造难以忘怀的用餐体验。

你将协助厨师长负责保障厨房的运营顺畅、高效开展,督导厨房内的菜品制作与后勤统筹工作,打造高执行力的厨房团队,并落地各项规章制度与作业流程。同时你需确保为游客提供安全、周到、专业、高效且灵活的餐饮服务,为上海迪士尼度假区的所有游客缔造充满魔法的用餐体验。

工作内容:

·      协助确保厨房的各项活动与相关的战略保持一致,同时充分落实指示。

·      协助组织部门的例会,保证内部信息的有效沟通。

·      确保厨房所有员工时刻提供给游客卓越的服务。

·      提供及时、有效且个性化的服务,确保达到专业、高品质的工作水准。遇到不能解决的问题时,迅速汇报,确保高效的服务。

·      与同事保持良好的沟通和和睦的人际关系。

·      利用工作轮换,丰富员工的工作内容等方法来提高工作效率和积极性。为游客提供最高品质的服务从而为公司吸引更多的游客。

·      指导员工开展工作,确保工作效率达到上海迪士尼度假区制定的各项标准与要求。

·      关注食品质量的改良,根据指导手册谨慎安排劳动力成本,并且尽量高效的使用设备以节约能源。

·      更新技术,提高生产效率。

·      分析当地,国内和国际的市场趋势,了解同行的运营情况保证餐厅的竞争力。

·      参与计划菜单的编写; 尽量使用多余的原材料防止浪费;预估游客的数量;预测市场情况;了解流行的菜肴并且勤更新菜单。

·      审查菜单和分析菜谱,决定所需原材料,劳动力,成本和建议菜肴的价格。

·      坚持食品既卖即做的理念。

·      上菜前要试菜。

·      估计原材料的需要量。

·      协助员工的录用。

·      通过适当的培训,增强员工的技能,提高厨房的工作效率。 .

·      组织年度工作评估总结员工的进步,并在专业技能发展上给予支持。

·      根据安排参加培训以提高技能和知识。

·      严格执行额外的合理的任务和职责。

此外,你将按照相关法律法规的要求,协助主要负责人做好食品安全管理工作,承担食品安全管理职责,具体包括:

·      掌握相应的食品安全法律法规、食品安全标准以及其他应当具备的食品安全管理能力。

·      具备识别和防控相应食品安全风险的专业知识。

·      熟悉本企业食品安全相关设施设备、工艺流程、操作规程等生产经营过程控制要求

·      参加企业组织的食品安全管理人员培训并通过考核。

·      督促落实食品生产经营过程控制要求。

·      检查食品安全管理制度执行情况,管理维护食品安全生产经营过程记录材料,按照要求保存相关资料。

·      对不符合食品安全标准的食品或者有证据证明可能危害人体健康的食品以及发现的食品安全风险隐患,及时采取有效措施整改并报告。

·      记录和管理从业人员健康状况、卫生状况 。

·      配合有关部门调查处理食品安全事故。

·      其他食品安全管理责任。

我们希望您:

·      持有烹饪艺术、酒店管理相关专业学历,或具备同等专业工作经验。

·      精通中餐凉菜烹饪技艺,需具备至少 2 年酒店或大型优质餐厅的厨房副厨师长工作经验;优先考虑拥有国际知名品牌或高端餐厅从业经历的人员。

·      必须全面掌握厨房卫生操作规范及职业健康安全标准。

·      对美食抱有极高热忱,时刻关注市场动态,坚守菜品创新的职业追求。

·      具备良好的领导能力、沟通能力、组织能力及人际关系处理能力。

·      掌握通用计算机操作知识,能熟练运用基础办公软件。

·      能够高效、准时地出品标准化、品质稳定的菜品。

·      中文流利,具备基础英文交流能力。

·      能够在紧迫的时间节点、工作期限及业绩目标的压力下开展工作。

·      熟悉菜单设计与优化、菜品成本核算、库存管理体系,且能全面把控厨房的盈亏管理。

·      能接受一周七天的灵活工作安排,并且能接受不同的班次,包括晚上,周末和节假日。

Job Summary:

The Sous Chef will be responsible for supporting the Chef De Cuisine in delivering unforgettable dining experiences by assisting in leading the efficient day-to-day operations of the kitchen, in full compliance with Shanghai Disney Resort Food and Beverage standards.

You will ensure the smooth and efficient running of the kitchen in coordination with the Chef De Cuisine, assist in overseeing the food preparation and logistics in the kitchen, support the management of an efficient kitchen team and the implementation of policies and procedures. You will also ensure the delivery of safe, courteous, professional, efficient, and flexible service, and work collaboratively to create a magical dining experience for all guests at Shanghai Disney Resort.

What You’ll Do:

·      Assists to ensure that culinary activities are aligned with the respective strategy, and the actions have been implemented where appropriate.

·      Assists to conducts regular communications meetings and ensures that departmental briefings and meetings are effective and conducted as necessary.

·      Ensures that all guest-contact Cast Members always provide exceptional guest service.

·      Handles all guest complaints and inquiries in a courteous and efficient manner, following through to make sure problems are resolved satisfactorily.

·      Maintains positive partner interactions with good working relationships.

·      Maximizes Cast Members’ productivity using multi-skilling, multi-tasking and flexible scheduling to meet the financial goals of the business as well as the expectations of the guests.

·      Focuses attention on improving productivity levels and the need to prudently manage labor cost within acceptable guidelines ensuring optimum deployment and energy efficiency of all equipment.

·      Ensures new technology and equipment are embraced, improving productivity whilst taking work out of the system.

·      Constantly evaluates local, national and international market trends, vendors and other hotel/restaurant operations to make sure that the restaurant’s own operations remain competitive and cutting edge.

·      Participates in planning menus and utilization of food surpluses and leftovers, considering probable number of guests, market conditions, popularity of various dishes and frequency of menu.

·      Reviews menus, analyses recipes, determines food, labor, overhead costs and suggests prices to menu items.

·      Serves fresh food to the guests which is prepared a la minute, is consistent in quality, and which reflects the style of the outlet concept.

·      Tests cooked foods before plate-up and service.

·      Estimates food consumption and purchases or requisitions of foodstuffs and kitchen supplies.

·      Assists in the recruitment and selection of Cast Members.

·      Develops the skills and effectiveness of all Kitchen associates through the appropriate training, coaching, and/or mentoring.

·      Assists to conducts annual performance development discussions with Cast Members and supports them in their professional development goals.

·      Attends training sessions and meetings as and when required.

·      Carries out any other reasonable duties and responsibilities as assigned.

In addition, you will assist the principal person in charge of food safety management in accordance with the requirements of relevant laws and regulations, and assume the responsibilities of food safety management, including:

·      Mastering the appropriate food safety laws and regulations, food safety standards and other food safety management skills that should have.

·      Expertise in identifying and preventing and controlling the corresponding food safety risks.

·      Familiar with food safety-related facilities and equipment, processes, operating procedures and other production and operation process control requirements in the enterprise.

·      Participating in the training of food safety managers organized by the enterprise and pass the examination.

·      Supervision and implementation of food production and operation process control requirements.

·      Check the implementation of the food safety management system, manage and maintain the records of the food safety production and operation process materials, and keep the relevant documents as required.

·      For the food that does not meet the food safety standards, the food that has been proved to be harmful to human health, and the food safety risk and hazards, promptly take effective measures to rectify and report.

·      Record and manage employee health and hygiene.

·      Cooperate with relevant departments to investigate and deal with food safety incidents

·      Other food safety management responsibilities.

What To Bring:

·      Degree in culinary art, hospitality, or equivalent professional experience.

·      Must be proficient in Chinese cold dishes with minimum 2 years work experience as Sous Chef in a hotel or large restaurant with good standards, preferably with experience in luxury international brands or well-known restaurants.

·      Comprehensive knowledge of kitchen hygiene practices and occupational health and safety standards will be essential.

·      A deep passion for food, a constant awareness of market changes, and a commitment to creativity.

·      Possess good leadership, communication, organization and relationship skills.

·      Proficient in general computer knowledge.

·      Capable of producing a consistent product in a timely manner.

·      Fluent in Chinese, basic English skills.

·      Able to work under pressure of tight timeframes, deadlines and financial goals.

·      Familiar with in menu engineering, food costing, inventory systems, and comprehensive P&L management

·      Full availability for any dates in a week and any shifts, including nights, weekends and holidays.
